Tzatziki Sauce (vegan)

Tangy, creamy, and just a little spicy this sauce is delicious for dipping and for gyros! My house lives on sauces and dips. If I have something creamy and tasty to add to a recipe I know it is gonna be a hit for the family.


This sauce is so quick and easy to make and is a fun alternative to other dressings for wraps and dips. We recently made mushroom gyros (instead of lamb or chicken) and this dressing was devoured atop the savory mushrooms, fresh vegetables, and flat bread.



The first thing you need to do is shred the cucumbers into a fine strainer. Press the excess water from the cucumber and pour into a large bowl. Add minced garlic, yogurt, dill, salt, pepper, olive oil, and lime juice. Mix and then chill for at least an hour. Then enjoy.


The hardest part of this recipe is definitely planning in advance to make the sauce to be ready and chilling before dinner. But this planning is so worth it as it gives the flavors a chance to merge and the sauce to get nice and cold which offsets the warm meal nicely or enhances the cold salad.



 

Tzatziki Sauce (VEGAN)

Makes Approximately 14 Servings (1/4 cup each)

Prep time 10 minutes plus 1 hour chill


Ingredients:

  • 2 cups grated cucumber (this was three small picking cucumbers)

  • 3 cups vegan yogurt

  • 6 cloves garlic minced

  • 3 tbsp dried dill (approx 1/4 cup fresh)

  • 3 tbsp lime juice

  • 2 tbsp olive oil

  • Salt and Pepper to taste

Directions:

  1. Shred the cucumbers into a fine strainer.

  2. Press the excess water from the cucumber and pour into a large bowl.

  3. Add minced garlic, yogurt, dill, salt, pepper, olive oil, and lime juice.

  4. Mix all ingredients

  5. Chill for at least an hour for optimal results
