Vegan Strawberry Ice Cream

Strawberries are a highlight of this summer. The plump sweet fresh berries are gobbled up by the handful. We are out of season in Florida now, but the out of state strawberries have been so deliciously ripe these last few weeks. Recently I was making a lemon pound cake and wanted a little ice cream to go with it. These strawberries made the most delicious ice cream treat. I am not usually a big fan of strawberry ice cream, but with these fresh strawberries and the non-dairy ingredients, this made the creamiest, cold, and sweet strawberry treat.

This recipe is incredibly easy with only three ingredients and fast to make. I start with a pint of freshly washed strawberries and remove the leaves. Then I place all berries in a blender and puree until smooth.
Then, pour berry puree into a bowl add in the can of sweetened condensed milk and the container of Coco-whip.
Finally, mix together until you have a smooth consistency. Pour into a freezer safe container and cover with plastic or parchment paper that touches the surface of the ice cream.
Freeze for at least 8 hours. Then enjoy!
This delicious treat allows you the opportunity to enjoy a creamy sweet berry dessert while avoiding the dairy. The ice cream is delicious on it's own or paired with other treats. I enjoyed it with a tart lemon pound cake.
Vegan Strawberry Ice Cream
Makes Approximately 6 Servings
5 Minute Prep and 8 Hour Freeze
Ingredients:
1 Pint cleaned Strawberries
1 - 11.6 oz can sweetened condensed coconut milk
1 - 9 oz container Coco-whip
Directions:
Washed strawberries and remove the leaves.
Place all berries in a blender and puree until smooth
Pour berry puree into a bowl add in the can of sweetened condensed milk and the container of Coco-whip.
Mix until you have a smooth consistency.
Pour into a freezer safe container and cover with plastic or parchment paper that touches the surface of the ice cream.
Freeze for at least 8 hours. Then enjoy!
