Pineapple Salsa

I love colorful food. Something about all of the bright colors just make me want to enjoy the food so much more. This salsa has a beautiful combination of red, yellow, and green.

This is a sweet, tart, flavorful salsa that is so incredibly simple to make. The only trick to remember is plan to make it the night before you need it. Or even a day or so in advance. Which, I must say for me is hard sometimes. This salsa is always a favorite for my fruit and chip loving family.
For this recipe you will need 1 pineapple, one whole onion, one whole green pepper, and 4-6 tomatoes (depends on your preference on tomatoiness you like).

Once you have all of your ingredients you need to prep the ingredients. First wash your tomatoes and green pepper. Cut the skin and top & bottom from your onion. Cut the skin from the pineapple and remove the pineapple core, I usually just cut the pineapple away from the cores.
Then you need to dice all of the ingredients into 1/4 inch or smaller pieces. Remember you need to pick these up with chips!
Once everything is diced you want to mix it all up in a large bowl until all ingredients are combined. Then place in fridge to chill for at least 4 hours, the longer the better as the juice from the pineapple spreads to the other ingredients.
If you want you can spice this recipe up by adding your choice of hot peppers finely diced.
This recipe is amazing with a good salty tortilla chip (We are partial to the hint of lime tortillas). This salsa is also delicious with some fish or as an accompaniment to fish tacos.
This is a refreshing colorful and versatile salsa that will be a staple in your house due to its simplicity and punch of flavors.
